I’m thinking of making the soup over the weekend, so it’ll just be re-heating it on Monday. The recipe should only take 40 minutes though – so definitely doable on a weekday.

- Lunch: Rice Bowls w/ Grilled Halloumi & Tahini Ranch Dressing
- Dinner: Moosewood‘s Potato Fennel Soup
Tuesday, April 16th
We have some frozen mango chunks that we haven’t used in the freezer so was looking for a smoothie recipe that wasn’t all tropical-ly and sweet. Luckily, Bon Appetit came through.
- Breakfast: Mango-Berry-Banana smoothie
- Lunch: Leftover Stir Fry
- Dinner: Moosewood‘s Szechwan Eggplant & Tofu Stir Fry
Wednesday, April 17th
Zak will make a double batch of Cooks Illustrated‘s Veggie Burgers every once in a while and freeze them. So Wednesday’s dinner is just pulling them out of the freezer and reheating them in a cast-iron pan until they get a nice crisp on both sides.

- Lunch: Black Bean Rice Bowl w/ Avocado & Lime
- Dinner: Veggie Burgers
- Prep: Buy Hangar Steak & Salt It
Thursday, April 18th
I never really fully plan a lunch for Thursdays because we tend to have leftovers that we should eat and also, you just kind of want to relax toward the end of the week. We do PB&J’s on Ezekiel Bread kept in the freezer – so you can make it any time & it’s packed with good-for-you grains.
- Breakfast: Smoothie
- Lunch: PB&J / Leftovers
- Dinner: Dining In‘s Hangar Steak w/ Dandelion, Arugula and Grana Padano
Friday, April 19th
We’re going to see family for Easter so Friday is meant to really finish up leftovers and then order pizza from our favorite place! Hot tip – order a full pie and freeze the rest of the pizzas in tin foil for a post-happy hour snack in the future. You’ll be happy you did.
