Review: I saw my Mom this weekend to celebrate both her birthday and Mothers Day and upon leaving, my Dad gifted me some Chicken Broth so that he could clear out the freezer and make more chicken broth before the weather got too warm. We froze most of it, but kept a quart and a half back to use as the base for soup. I’ve been wanting to make this Spring Minestrone to celebrate all the Spring veggies and this soup definitely delivered on everything you’re looking for (healthy, veggie-forward) – but I would’ve added some turmeric or something to pump it up a notch.
