Review: This was really on the edge of being a weekend recipe. But it’s doable on a weeknight with a little determination. First up – you need to make the focaccia the night before. Then when you get home from work the next night, take it out of the fridge and stretch into your cookie sheets. This will sit for about an hour to relax the dough. Once it’s relaxed and warmed up, then you can put your toppings on and pop in the oven for about 30 minutes.
It’s not hard by any means, but definitely requires a little planning & forethought. Which is where a meal plan comes in very handy!! Just saying.
