What to make this weekend to get ready for the week
- As always, clean your veggies
- Hard boil eggs
- Brew up espresso to take to work
- Make some rice
- Marinate tofu for Tuesday’s rice bowls
Monday, September 30th
We didn’t end up making the Pan Bagnats last week because we weren’t able to get our hands on ciabatta rolls. But I just ordered the rolls and salmon from Whole Foods, so this is definitely happening this week.
- Breakfast: Classic Berry Smoothie
- Lunch: Bon Appetit’s Pan Bagnat
- Dinner: Dining In‘s Crispy-Skin Salmon w/ Sauteed Bok Choy
Tuesday, October 1st
I heard from my sister that these Soba Noodles w/ Crispy Kale are pretty delicious, so we’ll be trying that on Tuesday.
- Breakfast: Greek Yogurt & Alison Roman’s Kinda Sweet Granola
- Lunch: Bon Appetit’s Tofu Yum-Yum Rice Bowl
- Dinner: Bon Appetit’s Soba Noodles w/ Crispy Kale
Wednesday, October 2nd
And… another thing we didn’t end up making last week were Beyond Burgers! Even though we’re not vegetarian, we try not to eat too much meat and these burgers are amazing.
- Breakfast: Classic Berry Smoothie
- Lunch: Leftover Soba Noodles
- Dinner: Beyond Burgers w/ Arugula salad
Thursday, October 3rd
I found out last year that I love lentils – they are filling and tasty and go well in a lot of things. I think black lentils look prettier, so we’ll swap out green lentils for black in the Big Green Lentil Salad.
- Breakfast: Overnight Oats
- Lunch: Big Green Lentil Salad
- Dinner: Cooks Illustrated’s Acqua Cotta Soup
Friday, October 4th
